Back in November of last year, we were approached by Beth who along with her family, was looking to host a charity launch night at Wooda Farm Holiday Park.
The family recently set up a new charity called ‘Jay’s AIM – Helping Young Hearts‘ in memory of Beth’s younger brother Jay who died unexpectedly from a sudden cardiac arrest in June 2017 whilst out running in Exeter. Jay was an apparently fit and healthy 28 year old who had shown no obvious previous symptoms. Unbeknown to everyone he actually had an undiagnosed hereditary heart condition called ARVC.
The charity was set up to inform young people (14-35) about the risks and prevention of sudden cardiac arrest in the SW’s young and active. They promote cardiac screening through a charity called CRY (Cardiac Risk in the Young). Train young people in CPR and how to use AEDs, and will also provide public access AEDs throughout the S South West.
When Beth asked us to cater for the dinner, we were keen to get involved and support such a great charity. We began the evening with homemade canapes which included goats cheese, caramelised red onion and thyme tarlets; crispy bacon and gruyere tartlets; spiced vegetable samosas and miniature assorted poppadoms topped with coronation chicken.
The 150 guests then sat down for a 2 course meal, Beth wanted to keep it simple so that is exactly what we did. We began with traditional roasted topside of beef with yorkshire pudding and rich gravy…
…and butternut squash, stilton and pecan nut wellington with a Madeira sauce for the vegetarians. Both were served with dishes of crispy roast potatoes and carrots, broccoli and green beans, placed on the tables for guests to help themselves.
For dessert, we served individual pavlovas topped with seasonal caramelised apple, pear compote and blackcurrant coulis. To finish, we poured steaming cups of English breakfast tea and fresh filter coffee.
