You will need:
– 70g plain flour
– 1/2 tsp caster sugar
– 1/8 tsp bicarbonate of soda
– 1/2 tsp salt
– 2 large eggs (separated)
– 60g whole milk
– 25g unsalted butter (and extra for cooking)

– Place flour, sugar, bicarb, egg yolks, milk and melted butter into bowl
– Whisk to create a smooth batter
– Rest for one hour
– Whisk egg whites to soft peak
– Fold in 1/3 of egg whites and mix
– Fold in remaining egg whites
– Heat a knob of butter in a non-stick frying pan on medium high heat
– Place teaspoons of batter all around the pan, keeping them separate
– Flip over when browned on one side and risen, flip and brown the other side
– Allow to cool
– Top with cream cheese, smoked salmon and fresh dill.
– Enjoy!
