By law, as a food business, we have to recognise and know the allergens below and if they are present in any of our foods that we serve. Your guests may have a food intolerance which could be life threatening or an intolerance which makes that food difficult to digest, we will cater both equally and as seriously!
The 14 main allergens are:
- cereals containing gluten – including wheat (such as spelt and Khorasan), rye, barley and oats
- crustaceans – such as prawns, crabs and lobsters
- molluscs – such as mussels and oysters
- tree nuts – including almonds, hazelnuts, walnuts, brazil nuts, cashews, pecans, pistachios and macadamia nuts
- sesame seeds
- sulphur dioxide and sulphites (if they are at a concentration of more than ten parts per mill
As the majority of foods on our menus are prepared by us at our premises in Okehampton this enables us to produce concise allergen lists for each menu item we serve and prepare.
We often get asked, especially for weddings, “We have coeliac guests coming – how can we choose a menu which is safe for them to eat, and make sure they don’t get left out”
Firstly, it is absolutely imperative that you ask for any dietary requirements of your guests attending your wedding or event, even if your menu does not require a pre-order for each course due to being sharing in style, we would always still insist you ask for dietary needs of your guests in advance. We can then ensure each and everyone of your guests is catered for and included, is fed yummy food that will not cause injury or harm, and also, often being in the middle of a catering tent, in a field in beautiful rural Devon, we often only have the items, ingredients and foodstuffs with us for the menu on that particular day so we for example cannot rustle up gluten free bread out of thin air!
The ideal scenario is for us to receive your dietary list, marked on your table plans- per table, at least two weeks prior to your wedding or event.
We will prepare individual canapes for the particular intolerance required, and our waiting staff will ensure they are delivered individually plated to ensure no contamination has taken place, if you can discreetly present yourself to our staff at the beginning of the event that is always appreciated!
Main course and dessert, again will be delivered in the same way- bespoke and prepared safely and uniquely for you.
Often the menu chosen can easily be adapted, for example Roast Beef with homemade gluten, dairy and egg free Yorkshire Puddings and gravy are perfectly easy for us to prepare.
A vegetarian choice we can easily make Vegan with a vegan cheese substitute for example, or a canape with vegan mayonnaise substitute for example.
We have always prided ourselves on catering for your whole guest list, and have received compliments on this over the years-however we do ask one thing of you if you have requested a dietary requirement meal- no offence or insult meant here!
PLEASE! If you have requested an allergen meal, please respect the time, dedication and costs involved in preparing that meal for you, our chefs are very often so very deflated when we have spent so much time preparing a special meal for only to be told ” Oh! I’m eating bread today-I’ve taken a tablet, ” I’m mostly Vegan, but I’m having a day off today” this inevitably insults those who are in a life threatening situation with regard to their allergies.
Ultimately- if you present yourself to us with an allergy we will do everything in our remit to keep you safe and ensure you are included in the days celebrations, in a discreet way, but one which leaves you feeling catered for and looked after!
